When I make lunches, I follow a formula. Each kid gets their sandwich or cheese and crackers with cold meat…and then one fruit, one veggie, one dairy and one “other”. That would be your granola bar, Goldfish or whatever. And for the most part they’re pretty good. Because they KNOW that if any of the healthy stuff doesn’t get eaten they don’t get the “other” in their lunch the next day.
But sneaking some extra fruits and veggies into the kids’ lunches never hurts! Some great tricks would be : using apple sauce as a dip, Hummus to dip red peppers in, pasta salad with veggies in it, and making a fruit or veggie cheese kabob. (I personally love that last idea and can’t wait to try it!)
